Finger Limes

Finger lime, whose real name is "microcitrus australasica", is a citrus fruit from the Australian finger lime tree. It is a small, elongated fruit that grows on a thorny shrub about 3m high. There are several varieties and colors of finger lime.

The fruit contains small, tangy pearls that burst in the mouth. You have to carefully open the fruit lengthwise to extract them. You can also cut it in half and gently squeeze it to release the pearls.

It pairs wonderfully with oysters, smoked salmon, scallops; or on a lemon cream, a sorbet, a dessert... You can even pour a few pearls into a drink or cocktail.
