Apple and kaffir lime cake
- 120 gr. of flour
- 1/2 bag of baking powder
- 1 pinch of salt
- 120 gr. of soft butter
- 70 gr. of brown sugar
- 2 kaffir limes
- 3 eggs
- 4 apples
Whip the softened butter with the sugar until smooth. Add the eggs one at a time, then the flour, baking powder and a pinch of salt. Zest the combawas, taking care not to reach the white layer that is bitter.
Peel the apples and cut into thin wedges.
Pour a little batter into a buttered springform pan. Arrange the apples nicely and pour the rest of the batter over them.
Bake in a preheated convection oven at 180° celsius degrees for approximately 30 min. Once out of the oven, sprinkle the cake with vanilla sugar. Serve warm with raw cream and kaffir lime zest - a delicious treat! This cake can also be eaten cold at any time of day.
