Citruses Fiadone
This Corsican speciality is made with the island's emblematic cheese : Brocciu, an extra-fresh cheese made from sheep's or goat's milk.
It is a very fresh dessert, combining the tangy notes of citrus fruit and the softness of cheese. It can be enjoyed on its own or with a spoonful of jam.
INGREDIENTS - For 8 servings
- 1 brocciu of 500g or 500g of brousse or ricotta cheese
- 5 whole eggs
- 200g of sugar : 180g for the preparation and 20g for the baking pan
- 1 tablespoon of limoncello or the juice of the citrus fruit of your choice
- The zest of the citrus fruit of your choice
- Butter for the pan
Preheat the oven to 180°. Generously butter a baking pan (rectangular or round, 20cm in diameter) and spread 20g of sugar around the edges and bottom.
In a bowl, combine the cheese, eggs, remaining sugar, lemon zest and limoncello. Mix with a fork to a smooth consistency about 4 to 5 cm high.
Pour into the tin and bake for 30 minutes at 180°. If it is still too pale, continue baking for a few minutes under the grill.
Remove from the oven, leave to cool and remove from the pan. Serve warm or cold !
