How to eat our hand of Buddha's pickles ?

Buddha's hand is a member of the citron family, and is a pulpless citrus fruit with flesh only. It has a unique taste, that is very soft and floral. 

Pickles can be eaten with grilled fish, vegetables, salads or even desserts: the combination with chocolate is perfect.

But for me, the best pairing is with cheese: preferably goat's cheeses that are mild enough to keep the dominance of the pickles. Or the incredible association with a burrata/mozarella and a good green olive oil.

Idea for this summer: mozzarella, pickles, flaky salt, pepper and green olive oil! And don't forget a good farmhouse bread :)
