Lemon Story Limoncello & Lemon Semifreddo
Smooth, light, and intensely fragrant, this semifreddo highlights citrus fruits and our Lemon Story Limoncello. A simple recipe that can be prepared in advance and will be a sensation at the end of a summer meal.
Ingredients (for 6 people)
- 150 g granulated sugar
- 5 extra-fresh egg yolks
- 3 egg whites
- 1 kaffir lime zest + 3 lemon juices - or 3 lemons (zest and juice)
- 40 g marmalade of your choice (with large zest pieces) - here our Meyer Lemon marmalade
- 30 cl very cold whole heavy cream
- 8 cl Lemon Story Limoncello (optional)
Preparation
- Pour the very cold cream into a bowl. Add 30 g of sugar and 2 cl of Lemon Story Limoncello. Whisk gradually until the mixture becomes frothy. Refrigerate.
- Macerate the marmalade in 3 cl of Limoncello for a few minutes so that it absorbs all the aromas.
- In a heavy-bottomed saucepan, mix the remaining 120 g of sugar with the finely grated kaffir lime / or lemon zests. Add the lemon juice, egg yolks, and the remaining 3 cl of Limoncello. Heat over low heat while whisking constantly for about 5 minutes.
The preparation should thicken slightly, become pale, frothy, and double in volume (this will take about 5 min).
Remove from heat, continue whisking for a few moments, then stir in the marmalade and its Limoncello.
- Whisk the egg whites until stiff peaks form. Gently fold the cream into the egg yolk/lemon mixture, then gently fold in the egg whites in several additions using a spatula, with circular motions to obtain a homogeneous mousse/cream.
Pour the mixture into a lined loaf pan or individual molds.
Place in the freezer for at least 5 hours.
- Take the semifreddo out 5 to 10 minutes before serving.
Serve it with a glass of limoncello!
