Kaffir Lime

Kaffir lime is an ancient type of citrus that comes from Indonesia. It is very popular in South Asia, and particularly in Thailand and India.

Kaffir lime is a small green and bumpy citrus, that measures around 6cm. All the interest of this fruit is in its zest, which has a very powerful taste resembling of lemongrass and ginger.

It is better to use the kaffir lime sparingly due to its strong flavour. It goes very well with coconut milk in curries, soups, broths, fish and white meats. In baking, it can be used in creams, mousses, cakes and biscuits.
