Kalamansi is a small fruit, hybrid of a tangerine and a kumquat. It has a sour and juicy flesh whose taste resemble of passion fruit and pomelo. Once candied, kalamansi offers softer notes of clementine and tangerine. Associated with the intensity and subtlety of Shira's spices, the preserve offers the perfect conforting condiment.

You will find warm notes of cinnamon, nutmeg and coriander and the freshness of star anise, aniseseed and cardamom. The all is lifted by ginger, gloves and white pepper.

Our preserve is delicious at breakfast with a brioche, a slice of bread or a yogurt. On the savoury side, it matches very nicely with white meats, foie gras and cheese.You can also use our marmelade of kalamansi and spices as a coulis to coat your desserts, you just have to loosen it in a bit of water.

Product prepared with a minimum of 65g of fruit per 100g.
Ingredients : kalamansi, sugar, pectin, Shira's spices (cinnamon, ginger, anise, star anise, clove, nutmeg, green cardamom, fennel, white pepper).

After opening, keep refrigerated and consume rapidly.

Our workshop

All our preserves are made in Provence, in our workshop in the heart of our rare citruses cultivation. We work with fresh and seasonal fruits, using traditional methods.

Each fruit is peeled, zested, seeded and cut by hand, then cooked in copper cauldrons in small quantities.
