Finger lime, whose real name is “microcitrus australasica”, is a citrus fruit from the Australian lemon tree. It is a small, elongated fruit growing on a thorny shrub about 3 m high. There are several varieties and colors of caviar lemon.

The fruit contains small acidic pearls that burst in the mouth. To extract them, carefully open the fruit lengthwise. Alternatively, cut in half and gently squeeze to release the pearls.

It goes wonderfully with oysters, smoked salmon, scallops, or on top of lemon cream, sorbet, desserts. You can even add a few pearls to a drink or cocktail.

We currently have two varieties of finger limes: pink and green. Pink ones are slightly softer and less tart than green ones.

Mix of pink and green finger lime: 100g (between 6 and 8  pieces)
