Buddha's Hand is a member of the citron family, made of flesh only, with no pulp or seeds. Its taste is highly fragrant, floral and sweet, a citrus fruit full of freshness.
For our pickles, we slice thin strips of Buddha's hand using a mandolin, then add a mild mixture of water, white vinegar and sugar.
Our pickles are the perfect condiment to use in any form: in a salad, with raw vegetables, to accompany white meat, grilled fish, ceviche...
The softness of Buddha's hand also goes very well with fattier dishes such as terrines and pâtés, providing a contrast with their freshness and florality.
Pickles are excellent with goat's cheese, mozzarella or burrata on farmhouse bread, with just a drizzle of olive oil.
Ingredients: Buddha's hand, water, white vinegar, sugar.
After opening, store in a cool place and use rapidly.
